Aside from what @Jackson85 suggested, I suggest looking at your logs and seeing if there is anything that is making you deop'd. I also suggest getting a friend/alt account/someone else on the server and trying it out with them to see if it is something specific to you or it happens with everyone. If you need a detailed explanation on how to go to your logs, I suggest looking at my explanation on how to check logs here.

It might be possible the server isn’t saving correctly. You could try running /save-all every time before you leave.
