Is there any way to fix mobs being replaced by other mobs in mc versions

EXAMPLE: ocelotes replace turtles in versions lower than the aquatic update and bees are replaced with floating pufferfish in version below 1.15.x.  Is there a way to make it so that these mobs don’t spawn and make people question what’s going on in my server xD.

Get rid of protocolsupport or viaversion?

Maybe it's in their configs somewhere but that's the only solution I can think of.
