Giving myself custom items

Question

So I wanted to give me and my friend a stick with knockback and I tried using "/give @p stick{Enchantments:[{id:knockback,lvl:5}]} 2" but the server completely denies it, despite working in my singleplayer world. If there is a plugin I can get to put enchants on it that would work fine too, I just want to have some fun with a knockback 5 stick.

Try 

/minecraft:give @p stick{Enchantments:[{id:knockback,lvl:5}]} 2

And if that doesn't work, the syntax may not work in 1.16. (Might need to use a command generator)

If you install the essentials plugin, you can then hold a stick and use this command: /enchant knockback 5
