Server is way too mob heavy

Hello, my boyfriend and I have created a minehut server. We are both relatively active minecraft players, or at least we've played the game enough to know our server is way too mob heavy. In the settings it's set to easy, however, I'd say it's more similar to hard with how many mobs pop up. I was hoping someone could tell me if there's a way to fix this so that the server is equivalent to what minecraft considers easy.

Sometimes the difficulty can reset. re-check if its on easy again the next time you boot up your server.
