Can I change back my server to 1.15.2?

I want to start a survival world but I would prefer to play in 1.15.2 because I find the new nether annoying to find blaze rods. Maybe there's a plugin that just brings the old nether to 1.16.1 or maybe I'm just dumb and I can't find a way to switch back the world to 1.15.2. Please help!

Sorry, that's not possible. You can find an old nether world download somewhere online and import it to your server, but otherwise that's not possible.
