Is there any way for me to moniter what goes on in my server while im away

There is some theft going on on my server and I want to figure out who it is, is there any way I can look at the server's history in order to see what everyone did?

You could install a plugin like core protect to see changes in block breaks and block places and some other things like that, then for chat and commands you can look in the logs folder the latest.log or one of the older ones. You could also get a plugin for locking chests/other storage blocks if stealing items is a problem.

As Spider said, coreprotect should do the job just fine for you.

Also, you can install DiscordSRV and link a "server console"  channel you setup to be able to spill all of the console to it so you can see the cmds and stuff that's going on, on the fly. But as both have stated, if you are just looking to see who accessed what chest and when, CoreProtect is what you need.
