Difficulty Change Completely Broken?

Can someone please explain to me why this is happening? I've tried using both the Minehut Website Console and the in-game commands to change the difficulty but it is stuck on easy. If I look in the Website it says the difficulty is hard, but mobs won't spawn and when I log in to the game and use /difficulty it will still say "The difficulty is Peaceful". This is also after many server restarts and client-side relogs to troubleshoot this on my own. If anyone has a fix for this it would be much appreciated!

If you go to your server panel you should be able to see a tab which is called "Settings" if you scroll through there you will find an option to change your difficulty. Have you tried there? Image below to see what it looks like:

Please note: After you change and save it you will be required to restart your server.
