Copper, Deepslate, and Glowberries?

I know some Youtubers have found deepslate and copper in their words, and glowberries in mineshaft chests as of the 1.17 update. Will downloading the ViaVersion plugin also add these blocks into my survival server? Will I be able to find them then, or will they only be available in creative mode or via commands?

Did you set it to spigot and go to 1.17? Because if not then it will not work they will show but they can not be used and if you did turn it to 1.17 did you restart server?
