1.16 not getting new cave generation

I was on minehut's twitter and it said install viaversion in plugins and I installed and went on my server and went to new chunks and when I went mining I couldn't find any of the new cave generation so i checked in spec mode and it was just 1.16 caves anyone have any idea why?

ViaVersion just allows it you can join on 1.17, the servers are still on 1.16.5. Also the new caves won't come till part 2 of 1.17 later this year.
