How do I run a check to see which item/name of item the anvil renames?

Im trying to stop people from renaming certain things, so how do I run a check to see which item/which name of an item an anvil is renaming?

If you want to block all items from being renamed, you can just not allow anvils to be used.

If you want to cancel only certain items, you can do something like this:

on anvil rename:
  if item is blaze rod, dirt, or stone:
    cancel event
    send "&cNot allowed" to player
