So it all on basic amplified world generation right, but when I change world generation to "Default" or "Large Biomes" it stays amplified! How do I fix this, thanks.

Whenever you change the world generation, only the newer chunks will be generated as Default, meaning the existing/pre-generated chunks will remain the same (Large Biomes). If you try to go a bit far away from the origin, you will notice that the world is now default.

You have to Reset your world in the World tab, delete the world files from the file manager, or alternatively change the Level name settings to generate a new world if you want to keep the old one

If you change the level name setting in the Settings tab, it will generate a new world. Worlds that have already been created will keep using the same generator and seed they were originally created with.
