How to change the loot table of fully grown wheat

Is there any way so that I can change what I get when harvesting fully grown wheat? Like instead of getting wheat and some seeds I get a diamond?

Yes, you can use skript to create that, I can make a simple one for you right now actually.

 

on break:
    if event-block is fully grown wheat plant:
        cancel event
        set event-block to air
        give player 1 diamond
