You should always have a server whitelist and save backups of your server in the dashboard or with a rollback plugin you can install. Minehut has many options for countering griefers and tough situations like this. It is not really the staff's responsibility to handle griefing, their main purpose is to help with server issues. The most you can do is report the player with any evidence you have and hope that your server can be recovered.

My IGN os Melao_ and today a guy named Sparkzy3 joined my Server started being racist, killed a brown mooshroom wich me and my friend gave a nametag and started breaking the map. He managed to kill my friend, grab his items and disconnect. 

I would suggest reporting the user here if you can provide as much evidence as possible, otherwises this user cannot be punished.

Staff can punish if server admins have enough evidence to prove that the user has broken rules.

I understand that but most of the time you're going to need hard evidence and it would be more valuable to learn how to prevent griefing rather than to punish for it, simply because of the hassle you will go through trying to punish anyone that randomly joins your server and blows it up.
