No, you cannot change your server version. All Minehut Servers are the same version, this cannot be changed however you can change certain aspects. Previous Minecraft Versions If you want your server to support older Minecraft Versions, then you will need to add the ProtocolSupport plugin. This will allow users to join your server on versions 1.8-1.15.2 Additionally, you can also use ViaVersion to allow users to join your server on previous versions. To use it you need the following plugins:

• ViaVersion: Base Plugin
• ViaBackwards: Allows support from 1.9+
• ViaRewind: Allows support from 1.8 to 1.8.8 Old Combat (1.8)

If you're trying to implement 1.8 PVP then there are plugins such as OldCombatMechanics and Combat Elite that recreate the 1.8 combat mechanics you're looking for. Minehut servers are currently 1.15.2.
