This might have been a client-sided issue that I do not know of because this has happened to me in the past before too, if you do not have Core-Protect Logs which you can revert back time with, I do not believe that you can get your stuff back. Sorry about that.
You most likely didn't execute /setworldspawn for it to save your spawnpoint or did not sleep on a bed, you cannot recover where you were unless you have a backup/save.

To change your difficulty, you need to be OP first, you have to OP yourself through your console first and then you should be able to run /difficulty hard or /difficulty normal. If not, you can just do it through the Minehut dashboard itself.
I don't know neither, my friend, but I believe that it might be one of your plugins causing this issue. Could you list your plugins and your latest.log in here. Thanks.
I don't think there is any issues with your plugins or your server, you have to leave the villagers alone for 20-30 minutes and they should breed. If this doesn't work, please tell me.

Go to 'Plugins', find under 'Search' and type "EssentialsX". Click on the plugin which says EssentialsX then click 'Download' or 'Install' (do not remember what it is).
