Hey, if you're talking about becoming a camera as in having a skull of a camera, you can use this command in 1.13-1.15 to give you a skull of a camera. 

/give @p minecraft:player_head{display:{Name:"{\"text\":\"Camera\"}"},SkullOwner:"SecurityCamera"} 1

However, if you're talking about becoming invisible and hidden from other players, you can get either use "Essentials" or "Super Vanish", both are available in the plugin list.

The same thing happened to me, I attempted to join the server twice, but my game kept crashing. I think it's an issue with the server.

You can't delete a server, however you can delete all the files and plugins from the server if you want to start fresh.
